A week ago (not so much now) I was reading a bunch of ‘healthy food’ ideas and feeling pretty taken in by the idea! So, reading about guiltless, homemade ice cream really caught my attention! Plus, it only required one ingredient: bananas! Of course, I wanted the spruced up version: peanut butter & chocolate, too!
So, after making our Spaghetti Squash, and around making our No Bake Cake Truffles, Kristofer and I made some ice cream! Of course, conditions were less than ideal… We don’t have a food processor. Just a blender. Which, while it worked, it took a lot of stopping, sticking a spoon in, mixing it up, and starting again, hoping the banana would circulate. (See Lemonade Slush!) Not to mention that while I thought we already had cocoa… it is, in fact, at my apartment – and not where we were. Instead, I threw some of the left over dipping chocolate into the blender, which instantly hardened and blocked everything up again. Good move, Lauren!
Looking pretty mushy when everything was done, I just scooped it all into an airtight container and let it freeze. Which it did… a little too well! Trying to eat it was the next chore! I didn’t get the perfect scoops like userealbutter’s cute doggy photo… but just spooned it out (straight into my mouth!) in front of the TV.
All in all, it’s pretty delicious, if you don’t mind the taste of bananas! The second time I helped myself to some ice cream, I had the peanut butter jar next to me, too. I think adding real cocoa will help my next batch – I want slightly less raw banana flavor. ;)
It’s such a cheap & easy treat, I’m glad I still have a little left in my freezer! Plus, it’s cheap enough that I can make it all the time!
The recipe, originally from The Kitchn, is short. Specifically, I used:
- 2 bananas, cut and frozen
- 1 scoop of peanut butter
- 2 scoops melted chocolate (not the same as cocoa, but there are nice chocolate chips everywhere!)
On a side note, my father and I made homemade ice cream a few days ago (with an ice cream maker)(cookies and cream)! Hilariously enough, I’m not the only one who likes to make lots of daily mistakes! He had the ice cream churning for about 30 minutes before he realized there was no mixer inside! That is, all of the liquid had just frozen to the sides, and the liquid in the middle was just sitting here. By the time he realized, he spent another 15 minutes scraping the frozen parts off the side of the canister so the machine could churn. What a funny guy! It turned out OK though. :)
